This is true through every stage of the bread-making process, starting with mixing, which takes place in our state-of-the-art mixing rooms. The flours we use are aged fully, which gives the end product the best quality due to the natural fermentation and production process.
We make more than 150 different hand-made breads, and our teams of artisan bakers have all been trained to mould the dough in the same way. So, even though these breads are made by hand, there is consistency throughout.
We can also cope with large volumes, which is where our state-of-the-art processing machines come in. These are all computer controlled and monitored by our highly trained staff.
For most of our breads, we like to take our time with the proofing process, as this provides a much better quality product with superior flavour. To do this, temperature, humidity and time are strictly controlled.
As for the baking itself, we use two different oven types, depending on the product we are baking – either a traditional stone-soled oven or a modern convection oven.
